Salumificio Merlotti was set up immediately after the 2nd World War in Castel d’Ario, the village where the legendary driver Tazio Nuvolari was born.
Over the years, this small sausage factory turned into a large business offering products in the area with an increasingly capillary distribution. With the third generation of entrepreneurs the factory relocated its production plant in Marmirolo on a 3,000 square-meter area completely renovated in compliance with EU directives.

Since 1999 the production and office facilities are fully equipped in line with the highest quality standards.
Salami, "Crespone" Mantua-style
The taste of top-quality carefully seasoned heavy pig meats, flavoured with wine and garlic, manually stuffed and tied-up in natural pig guts. One of the most appreciated Mantuan products, produced according to traditional rural techniques.

Salami, "Gentile" Mantua-style
The taste of top-quality carefully seasoned heavy pig meats, flavoured with wine and garlic, manually stuffed and tied-up in natural pig guts. One of the most appreciated Mantuan products, produced according to traditional rural techniques.

Weight: 1 to 1.800 kg after 90-day seasoning for "gentile" (rectum) pork guts
 
Salami, country-style
Seasoned medium-minced salami obtained from a painstaking and careful selection of meats and natural flavourings. Stuffed in artificial casing.

Typical medium-finely minced salami produced according to methods from the finest Italian tradition. Stuffed in artificial casing.
